Simple Potato Mash

Ingredients
5 large potatoes
¼ cup light olive oil
Salt and freshly ground black pepper

Method
- Peel the potatoes, cut them into quarters and boil them in lightly salted water until they are tender. Drain, return to the pot and place back on low heat.
- Let the potatoes steam for a couple of minutes, shaking the pan to ensure they don’t stick.
- When dry and fluffy, add the olive oil, salt and pepper and combine with a masher or whisk.

You can use any variety of potato for this recipe, however, the following potatoes tend to work better:
