Simple Potato Mash

Preparation Time: 5 minutes
Cooking Time: 10 minutes
Serves: 6-8
Ingredients

5 large potatoes
¼ cup light olive oil
Salt and freshly ground black pepper

Method

  1. Peel the potatoes, cut them into quarters and boil them in lightly salted water until they are tender. Drain, return to the pot and place back on low heat.

  2. Let the potatoes steam for a couple of minutes, shaking the pan to ensure they don’t stick.

  3. When dry and fluffy, add the olive oil, salt and pepper and combine with a masher or whisk.

Recommended Varieties

You can use any variety of potato for this recipe, however, the following potatoes tend to work better:
