Traditional Potato Salad with Avocado Dressing

Preparation Time: hour 10 minutes
Cooking Time: hour 15 minutes
Serves: 4
Ingredients

4 potatoes (choose from Royal Blue, Ruby Lou or Nadine) unpeeled, quartered
4 rashers rind less bacon, chopped and grilled
3 spring onions, finely chopped

Dressing:
2 large avocados
½ cup sour cream
juice and grated rind of ½ lime
½ green chilli, finely chopped (optional)
salt and pepper to taste

Method

  1. Boil, steam or microwave potatoes until tender.
  2. Drain.
  3. Fold through spring onions and bacon through potatoes.
  4. Pile onto a salad plate and spoon over potatoes.

Cooking Times:

6 -10 minutes microwaved
15-20 minutes boiled
10-15 minutes steamed

Recommended Varieties

You can use any variety of potato for this recipe, however, the following potatoes tend to work better:
